Tasting Notes
Campo del Drago 2018 is very linked to its terroir. It shows a unique minerality and complexity. The sip is intense, broad and deep. The tannins are present, but maintained quite elegant thanks to the acidity. The sour almond finish on the mouth is the evidence of how characterizing the vintage was for this grape variety.

Campo del Drago enjoys one of its highest expressions when paired with the succulence and softness of pigeon, whose breast is served here at its most delicate. The bold spicing of the wine is perfectly at one with the flavor combination bestowed to the meat by the beetroot, celeriac and the exotic overtones of coffee.
Decant it for one hour and serve it at 16-18°C.
